How To Make this low-carb Chicken Salad
- Combine chicken breast, garlic cloves, and Frank's Hot Buffalo sauce in a slow cooker on high for 3 hours.
- Remove the chicken from the slow cooker and use a fork to shredded the cooked chicken.
- In a large bowl combine avocado, tomatoes, black beans, and corn.
- Top with shredded chicken. Drizzle with Ranch dressing. Serve and enjoy.

Ranch Dressing. If you are short on time you can replace the homemade Ranch dressing with store-bought Ranch dressing. Ken's Steakhouse Ranch dressing is a gluten-free, store-bought option that works well in a pinch.
Canned Corn. If you're on a low-carb carb diet, omit the canned corn. You'll save approximately 50-60 calories per serving.
STORAGE
- If you don't want to add all of the shredded cooked Buffalo chicken to the salad, store some of it in a glass container with the sauce.
- This will keep the chicken moist and you can use it for chicken tacos or serve with a side of brown or white rice.

For The Crock Pot Buffalo Chicken
- 2 pounds Chicken Breast
- ¾ cup Frank's Red Hot Buffalo Sauce
- 3 cloves Garlic
For The Salad Bowl
- 3 Avocado
- 3 medium Tomatoes
- 14 ounces Organic Black Beans
- 14 ounces Organic Corn
- ½ cup Ranch Dressing
- 2 cups fresh lettuce
Instructions
- Add chicken breast, fresh garlic cloves, and Buffalo sauce into your Crockpot and set on high for three hours.
- Remove the chicken from the slow cooker and shred the cooked chicken.
- In a large bowl combine avocado, tomatoes, black beans, and corn.
- Make a bed of lettuce add the veggies and top with the shredded Buffalo chicken. Drizzle with Ranch dressing. Serve and enjoy.
