Our Buffalo Chicken Salad recipe has it all, taste, texture, color, and did I mention it’s healthy, too? You’ll just need some chicken breast, your favorite Buffalo sauce, and some fresh garlic to get started.

Recently, our much loved Breville Multi-Function Cooker stopped working. Thankfully, we got an awesome deal on this Multi-Function Cooker and it’s been serving us faithfully ever since.

Fresh avocado, tomatoes, corn, and black beans topped with creamy homemade Ranch dressing make the perfect healthy midweek lunch.

You can also use this shredded, low carb Buffalo chicken for a Buddha bowl or as taco filling! The possibilities are endless.

How To Make this low-carb Chicken Salad

  1. Combine chicken breast, peeled garlic cloves, and Frank’s Hot Buffalo sauce in a slow cooker on high for three hours.
  2. Remove the chicken from the slow cooker and
  3. Use a fork to shredded the cooked chicken.
  4. In a large bowl combine avocado, tomatoes, black beans, and corn.
  5. Top with shredded chicken.
  6. Drizzle with Ranch dressing. Serve and enjoy.

Simply mix your Buffalo Chicken salad with any cooked pasta of your choice.

I recommend any spiral or grooved pasta for this as it holds the sauce (and flavor!) much better. Penne and rotini are favorites in our house!

Just add extra Frank’s Red Hot Buffalo sauce to account for the pasta. I suggest trying an extra ¼ of a cup and increasing from there.

MORE Tips for making chicken salad

Ranch Dressing. If you are short on time you can replace the homemade Ranch dressing with store-bought Ranch dressing. Ken’s Steakhouse Ranch dressing is a gluten-free, store-bought option that works well in a pinch.

Canned Corn. If you’re on a low-carb carb diet, omit the canned corn. You’ll save approximate 50-60 calories per serving.

STORAGE

If you don’t want to add all of the shredded cooked Buffalo chicken to the salad, store some of it in a glass container with the sauce.

This will keep the chicken moist and you can use it for chicken tacos or serve with a side of brown or white rice.

  • 3 Avocado
  • 3 medium Tomatoes
  • 14 ounces Organic Black Beans
  • 14 ounces Organic Corn
  • 1/2 cup Ranch Dressing
  • 2 cups fresh lettuce

Instructions

  • Add chicken breast, fresh garlic cloves, and Buffalo sauce into your Crockpot and set on high for three hours.
  • Remove the chicken from the slow cooker and shred the cooked chicken.
  • In a large bowl combine avocado, tomatoes, black beans, and corn.
  • Make a bed of lettuce add the veggies and top with the shredded Buffalo chicken. Drizzle with Ranch dressing. Serve and enjoy.
