Ingredients
For exact measurements check the recipe card.
PIE CRUST - Easy peasy for this recipe. Just look for a 9-inch Graham Cracker Crust.
FILLING - (softened) cream cheese, whipped cream, and sifted powdered sugar.
Optional: For an extra boost of flavor add 1 teaspoon of pure vanilla extract to the cream cheese.
TOPPING - Fresh, sliced strawberries. You will find strawberries all year in pretty much every supermarket. But did you know that the peak season for strawberries is between April and June? It will vary depending on where in the country you live. Here's a good guide to finding out when strawberries peak in your neck of the woods.
Variations and Additions
Strawberries are one of my favorite fruit. But you can definitely change it up and use other berries such as blueberries, blackberries, or raspberries. A mix of several fruits works well, too.
How To Make Creamy Strawberry Pie
- In a large mixing bowl beat, cream cheese and ½ cup sifted powdered sugar with an electric mixer until smooth. Set aside.
- In a separate bowl whisk heavy cream with an electric mixer until it begins to firm up. Sift ½ cup powdered sugar into the whisked cream and beat lightly until well combined.
- Fold the whipped cream into the cream cheese mixture until well combined.
- Transfer the mixture into the Graham Cracker crust.
- Top with sliced strawberries.
- Chill for a minimum of 2 hours in the refrigerator.
Can You Freeze a No-Bake Strawberry Pie
The short answer is yes; you can freeze this no-bake Strawberry Cream Pie. I have never done this myself but there's no reason not to. The graham cracker crust, cream cheese, and whipped cream will freeze well as do the strawberries.
Note of caution. If you're altering the recipe and using gelatin with your strawberry topping you cannot freeze the pie. It's not part of the recipe but I know some readers like it.
DEFROSTING TIP - Rather than leaving the frozen pie out on the counter, allow it to defrost slowly in the fridge. About 4-6 hours.

Can I freeze this? I was wanting to make some desserts ahead of time using strawberries. This sounds perfect if it can be frozen. Thank you for your response!
Maike

Can you use cool whip instead of whipping your own cream? If so how much?
Maike
Yes, that's a great time-saving idea. Try substituting the whipped cream with an 8-ounce tub of thawed Cool Whip.

I have yet to make this for Christmas Day, but I was debating to make it gluten free without any crust and make it scoopable or I could try a gluten free crust.
Maike
Hi Sandra. That's an interesting idea. I have never done it but these gluten-free graham crackers might be worth a try. Merry Christmas.
