GROUND BEEF - I recommend lean ground beef. 90/10 works great but 85/15 will also work. If you choose ground beef with a higher fat content, drain some of the excess fat before adding the mushrooms.
ONION - Sweet, Vidella, or white onions work. Use whatever you have on hand.
MUSHROOMS - Use your favorite fresh mushrooms.
CREAM OF MUSHROOM - Use classic condensed cream of mushroom soup.
MUSTARD: Adds a lovely earthy flavor. Mustard is part of a traditional stroganoff recipe, but if you don't have it, you can still have a delicious stroganoff dinner. I love dijon mustard, but choose whichever mustard you like best.
SOUR CREAM - This adds tanginess and creaminess to the recipe. If you don't like sour cream, you can substitute it with Greek Yogurt.

How To Make 'Lazy' Ground Beef Stroganoff

- Brown ground beef and onions in a large skillet for 5 minutes. Add mushrooms, cover the skillet with a lid and simmer until the mushrooms are tender.
- Add cream of mushroom soup and one tablespoon of mustard and cook until heated through.
- Remove the skillet from the heat and stir in sour cream. Serve immediately and if desired, garnish with fresh parsley.
Recipe Success Tips
MUSHROOMS - Fresh mushrooms consists of a lot of water. This water gets released during the cooking process.
If you find that there is too much liquid in the skillet and worry that your Stroganoff sauce might be too thin, use a large spoon and remove some of the liquid. It's not required and, as such, not a part of the recipe, but it rather depends on your personal taste preference.
EXCESS GREASE - Depending on what type of ground beef you choose, the amount of excess fat will vary greatly. If you find that you have too much grease, drain it before adding the mushrooms.
THICKEN - If you want to thicken the soup, combine a couple of tablespoons of cornstarch with water and slowly add the mixture to your sauce.

Serving the Stroganoff over egg noodles is a classic. But you can also serve this recipe over rice, mashed potatoes, or some delicious homemade spaetzle.
Storage and Leftovers
LEFTOVERS - Store in an airtight container in the fridge for up to 2 days.
FREEZE - If you want to make a larger batch and turn this recipe into a freezer-friendly recipe, you can do that. Once cooked, allow the Stroganoff to cool completely, transfer it into a freezer-friendly bag or container, date, and store it in the fridge for up to 3 months.
REHEAT: To reheat, place the leftovers in a large skillet and gently warm over medium heat, stirring frequently. You can also reheat it in the microwave.

Ground Beef Stroganoff
Ingredients
- 1 pound ground beef
- 1 medium onion
- 8 ounces mushrooms sliced
- 2 cans cream of mushroom soup
- 1-2 tablespoons mustard
- 1 cup sour cream
Instructions
- Cook ground beef and diced onion in a 10-inch skillet over medium heat, stirring occasionally. Add mushrooms after 5 minutes and cover with a lid. Simmer until the mushrooms are tender. About 8 minutes.
