This quick and easy Cheesy Beef and Bean Casserole is a delicious recipe the whole family will love.
Tender beef and beans are baked in a delicious tomato-based sauce and finished with a layer of gooey melted Cheddar cheese.
With just a few minutes of prep, the dish is ready to go into the oven.
I like to serve this recipe with a quick side salad such a German cucumber salad.
If you want to pack some extra veggies into this meal, you can also serve it with the Broccoli and Cauliflower salad.
For dessert (especially during fall months) I love to serve a bit of Apple Crisp. It’s a perfect ending to this home-cooked comfort dinner.
Ingredients
- 1 pound GROUND BEEF – lean, I used 90/10
- 2 14-ounce cans RED KIDNEY BEANS
- 1 tablespoon CHILI POWDER
- 1 ½ cup SALSA, chunky … I use mild, but look for hot if you like it spicier
- 2 cups SHARP CHEDDAR CHEESE – shredded
- 1 14-ounce can DICED TOMATOES – puréed until smooth – or use tomato sauce instead
- optional: SALT for seasoning
How To Make Beef and Bean Casserole
This is a such and easy and low-prep casserole dish perfect for busy weeknight dinners.
Prep
- Brown the ground beef over medium heat in a large skillet. About 8 minutes. Remove any excess fat.
- Transfer canned diced tomatoes into a food process, purée until smooth.
- Transfer the cooked beef mixture, red kidney beans, tomatoes, and chunky salsa, and chili powder into an ungreased 8×11 casserole baking dish. Season with salt.
- Cover with foil and bake for 35 minutes at 400 Fahrenheit.
- Remove from the oven and sprinkle with shredded sharp Cheddar.
- Continue to bake uncovered for an additional 10 minutes or until the cheese is melted.
How To Serve This Casserole
You can enjoy the beef and bean and beef casserole as is.
I like to serve it over a handful of restaurant-style tortilla chips and with a dollop (or two) of sour cream. Sprinkle it with a few finely chopped green onions for some visual appeal.
My husband likes his Beef and Bean Casserole with a side of rice. So most of the time I’ll serve this casserole dish with a side of basmati or jasmine rice.
