Ingredients needed to make a Walking Taco Casserole.

BEEF – I use lean ground beef to keep the casserole flavorful without too much grease. If you want a lighter option, you can use ground turkey. Both options work wonderfully in this recipe.

ONION – Diced yellow onion adds sweetness and depth to the beef mixture. You can use red or white onions instead if you prefer. They each bring a slightly different flavor, so choose what you like best.

SEASONING – I rely on pre-made taco seasoning for convenience, giving the dish that classic taco flavor. If you want to personalize it, you can make your own blend with chili powder, cumin, garlic powder, and paprika.

TOMATOES – Diced tomatoes add juiciness and a slight acidity that balances the rich flavors. For a smoky twist, I recommend using fire-roasted tomatoes. They bring a delicious new layer of flavor to the dish.

GREEN CHILIES – Diced green chiles provide a mild heat and additional flavor. If you like more spice, you can use jalapeños. They’ll kick up the heat and add a zesty note that’s quite enjoyable.

CHEESE – I love using Colby Jack cheese because it melts beautifully and adds a creamy, cheesy layer. Cheddar or Monterey Jack are also great choices. Sometimes, I mix different cheeses for a unique flavor profile.

FRITOS – The crunchy topping adds a fun texture contrast. If you don’t have Fritos, you can use tortilla chips. Just crush them slightly before adding to ensure they spread evenly over the casserole.

Serving Suggestions

GUACAMOLE – A creamy dip that complements the casserole’s flavors. You can make it with ripe avocados, lime juice, salt, and diced tomatoes. It adds a refreshing contrast and can be served on the side or spooned over each portion.

FRESH SALSA – This adds a bright and tangy kick to the meal. Use fresh tomatoes, onions, cilantro, and lime juice for a delicious topping. It works well with the casserole or as a dip for tortilla chips.

REFRIED BEANS – A warm and creamy side that pairs perfectly with the taco flavors in the casserole. You can serve them on the side or spread them on top before adding the cheese layer.

MEXICAN RICE – This fluffy rice dish, cooked with tomatoes, onions, and spices, is a perfect side. It complements the casserole and can be easily prepared on the stovetop or in a rice cooker.

CHOPPED SALAD – A fresh, crisp salad with lettuce, tomatoes, cucumber, and a light dressing. It adds a refreshing element to balance the rich and hearty casserole.

Planning and Leftovers

STORE – Store any leftovers in the fridge in an airtight container for up to 3 days.

FREEZE – You can freeze this casserole, but leave off the Fritos. Wrap the dish tightly and freeze for up to 2 months. Add the Fritos after thawing and reheating.

REHEAT – Reheat in the oven at 350º Fahrenheit until warm. For a quicker option, use the microwave, but add fresh Fritos for crunch.

MAKE AHEAD –  You can prepare the beef mixture ahead of time and store it in the fridge. When ready to bake, assemble the casserole and bake as directed.

Recipe Success Tips

DRAIN – Removing excess grease after cooking the ground beef prevents the casserole from becoming too oily.

EVEN CHEESE LAYER – Spreading the cheese evenly ensures every bite has melty goodness.

ADD CHIPS LAST – Sprinkle Fritos on top just before serving to keep them crunchy.

Commonly Asked Questions

What is a “Walking Taco”?

Walking tacos are meals in which taco meat and other toppings are added to individual-sized bags of chips and are meant to be eaten on the go. This concept is especially popular when camping or at parties.

What is “Walking Taco Casserole”?

A walking taco casserole combines all of your favorite ingredients in a walking taco and combines them in a casserole dish instead of a chip bag. The chips are instead added straight to the casserole dish, and the meal is enjoyed as a regular meal.

How can I add spice to this recipe?

If you like your tacos spicy, you might want to use hot chiles instead of diced green chiles. You can also serve the casserole with hot sauce as a topping or add sliced jalapeños.
