Walking Taco Casserole

If you loved walking tacos as a kid, you need this casserole in your life! It has everything the classic recipe does, but it’s really easy to throw together for a weeknight dinner.

  • Preheat the oven to 350º Fahrenheit.
  • Brown and crumble the ground beef in a large skillet over medium heat.
  • Once the ground beef has almost cooked through, add the diced onion and cook until there is no pink remaining in the beef and the onion is translucent. Drain any excess grease from the skillet.
  • Stir the taco seasoning and sour cream into the ground beef.
  • Transfer the ground beef mixture to a 9x13 casserole dish and combine it with the pinto beans, tomatoes, and green chilies.
  • Sprinkle the shredded cheese over the beef layer.
  • Bake at 350º Fahrenheit for 25-30 minutes or until the dish is bubbly and the cheese is melted.
  • Pour the bag of Fritos over the top of the melted cheese, add your desired toppings, and serve.
