Blackened Chicken Alfredo
Blackened Chicken Alfredo is a creamy pasta dinner topped with golden, seasoned chicken, ready in about 30 minutes. It tastes like the dinner you’d order at a restaurant, made in your own kitchen.
Tender chicken coated in a smoky homemade blackening rub, tossed with linguine in a buttery Parmesan cream sauce.
For years this was my go-to order at Italian restaurants. Now it comes off my own stove in half an hour. There’s always a little extra sauce in the pan for seconds.

Ingredient Notes

CHICKEN – Tenders cook in minutes and stay juicy under the spice crust. Chicken breasts sliced lengthwise into strips work just as well and often cost a little less per pound.
BLACKENING SEASONING – The whole rub comes straight from the spice rack, with smoked paprika doing the heavy lifting. Mix it right into the olive oil so every tender gets an even coat.
PARMESAN – One 8-ounce block gives you the 2½ cups of freshly shredded cheese the sauce needs, and shredding it yourself is what makes the sauce melt smooth. (link placement note: see External Links section, I moved the USDA leftovers link to STORE and left this note unlinked, details below) Save the bagged shreds for tacos.
BUTTER – I cook with unsalted butter and season the sauce myself. Salted butter works fine here too. Just taste before adding any extra salt at the end.
HEAVY CREAM – Full-fat heavy whipping cream thickens the sauce on its own, no flour needed. It’s the one ingredient worth keeping exactly as written.
How To Make Blackened Chicken Alfredo
Please check the printable recipe card below for more detailed instructions.

- Coat the chicken tenders in the olive oil and seasoning paste.
- Sear the tenders in a hot skillet and set them aside to rest.
- Boil the pasta and whisk the cream sauce together while the chicken rests.
- Toss the hot pasta and sliced chicken with the sauce and serve.
Leftovers and Storage
STORE – Keep leftovers in an airtight container in the refrigerator for up to 4 days.
FREEZE – Alfredo is at its best fresh. To freeze anyway, cool it completely and store airtight for up to 2 months, then thaw overnight in the refrigerator.
REHEAT – Warm leftovers in a skillet over medium-low heat with a splash of cream or milk, stirring, for 5 to 8 minutes. For single servings, microwave at half power for 60 to 90 seconds, stirring halfway through.
MAKE AHEAD – Cook and slice the blackened chicken up to a day early and refrigerate it. Make the sauce and pasta fresh, then warm the chicken right in the sauce before serving.

Serving Suggestions
ADD A CRISP SALAD – Our German Cucumber Salad is cool and tangy next to the rich pasta. It comes together while the chicken sears.
KEEP THE VEGGIE SIMPLE – Roasted Frozen Broccoli goes in the oven when the pasta water goes on. The florets are made for dragging through extra Alfredo.
DATE NIGHT IN – Serve it straight from the pan with warm garlic bread and something cold to drink. Restaurant night, no reservation needed.
DOUBLE IT FOR A CROWD – The recipe doubles easily in a wide Dutch oven. A pan of Honey Butter Skillet Corn on the side keeps younger eaters at the table.

Recipe Success Tips
HOT PAN – Give the skillet a full minute or two over medium-high before the chicken goes in. That first strong sizzle builds the golden crust that makes the dish.
TIMING – Drop the pasta into the boiling water when the chicken comes out to rest. The sauce comes together in the same window, and everything lands hot at once.
LOW SIMMER – Keep the cream at a gentle simmer while the Parmesan whisks in. Low, steady heat is what gives you a smooth, pourable sauce.
TEMPERATURE CHECK – Chicken is done at a safe internal temperature of 165º Fahrenheit. A quick-read thermometer settles it in seconds.
EXPERT TIP – Toss the drained pasta into the sauce while it’s piping hot. Hot noodles soak up the sauce and keep it loose, silky, and ready to serve.

Commonly Asked Questions
Is Blackened Chicken Alfredo Spicy?
Blackened Chicken Alfredo has a gentle heat that most kids handle just fine. The rub uses ¼ teaspoon of cayenne across a full pound of chicken, and the cream sauce softens it even more. Want more fire? Double the cayenne or stir a pinch of red pepper flakes into the finished sauce.
Can I Use Chicken Breasts Instead of Tenders?
Yes, chicken breasts work in place of tenders with one quick prep step. Slice two large breasts lengthwise into strips about the size of a tender. They sear in the same 3 to 4 minutes per side, cost a little less per pound, and taste identical under the blackening rub.
What Pasta Works Best for Chicken Alfredo?
Linguine, fettuccine, and spaghetti all work beautifully in this blackened chicken pasta. Long noodles hold the sauce best, which is why the photos show linguine. Short shapes like penne work too, especially for younger eaters. Cook whatever you choose to al dente so it stands up to the rich sauce.
Can I Use Store-Bought Alfredo Sauce?
Yes, a jar of Alfredo sauce works when you need to shave off a step. Warm two 15-ounce jars and toss with the pasta and chicken as written. That said, the homemade version takes about 10 minutes. If you love a classic egg-yolk style, try our Alfredo Sauce next.
What Is the Difference Between Blackened and Cajun Seasoning?
Blackened seasoning builds on smoked paprika and herbs, while Cajun blends lean harder on cayenne. Both come from Louisiana cooking, so the flavors are cousins. Blackening gives you that smoky, toasty crust with gentle heat, which is exactly what this recipe uses. Here is the quick comparison:
