CHICKEN - I used boneless skinless chicken breasts in this recipe. You could also use chicken tenders if that's what you have on hand.
PASTA - Any cooked pasta will work in this recipe! I used regular spaghetti noodles, but thin spaghetti, linguine, cavatappi, or penne would all work well.
CHEESE - For flavor, I prefer sharp Cheddar cheese in this recipe, but you could substitute Cheddar jack or Mozzarella. Freshly shredded cheese will melt the best. For a slightly different direction you could also use some velveeta cheese.
SPICES - Use salt, pepper, Italian seasoning, onion powder, and paprika to create a flavorful base for your Crockpot Chicken Spaghetti. Add Rotel tomatoes for a bit of zest. For a spicier kick, sprinkle in some red pepper flakes to taste.

Crockpot Chicken Spaghetti
Ingredients
- 1 ½ pounds chicken breast boneless, skinless
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 teaspoons garlic minced
- 1 10-ounce can Rotel tomatoes
- ½ cup chicken stock
- 8 ounces cream cheese
- 1 cup cheddar cheese shredded, I used sharp Cheddar
- 16 ounces spaghetti
- 1 pinch red pepper flakes optional
Instructions
- Place the chicken breasts in a single layer at the bottom of the Crockpot. Sprinkle the chicken breasts with salt, pepper, Italian seasoning, onion powder, paprika and minced garlic.
- Pour the can of Rotel tomatoes over the chicken breasts and add the chicken broth.
- Cook the chicken on low for 4-6 hours until fully cooked through. (*see notes)
- Once the chicken is fully cooked, shred it using two forks. Add the cream cheese and Cheddar cheese to the Crockpot and stir until well combined.
- Cover the Crockpot with the lid, and allow the sauce to continue heating through as you make the pasta.
- Cook the spaghetti al dente according to the package instructions.
- Add the cooked and drained spaghetti to the crock pot and stir well to combine.
- Season to taste with salt, pepper, and optionally a pinch of red pepper flakes.
