Ingredients needed to make Air Fryer Pork Chops.

PORK CHOPS – Buy boneless chops about 1 inch thick, usually labeled center-cut loin chops. That thickness is what this recipe is built around, and it gives you a golden outside and a juicy middle. Thinner chops finish faster, so check them early.

OLIVE OIL – A light coat helps the rub stick and gives the chops their color. Avocado oil or any neutral high-heat oil works the same way.

KOSHER SALT – The full teaspoon is for Diamond Crystal. With Morton kosher or table salt, use a heaping ½ teaspoon. Like a saltier crust? Go up to 1½ teaspoons of Diamond Crystal.

SMOKED PAPRIKA – Regular paprika works if that is what you have in the cabinet. For a little heat, swap in a pinch of chili powder.

GARLIC AND ONION POWDER – Powders are the right call here. They spread evenly, cling to the oiled chops, and stay put through 15 minutes of hot air.

Leftovers and Storage

STORE – Keep leftover chops in an airtight container in the refrigerator for up to 4 days. Store them whole when you can. Whole chops hold more moisture than sliced ones when you reheat them.

FREEZE – Cooked chops freeze well for up to 3 months in a freezer bag with the air pressed out. Thaw overnight in the refrigerator.

REHEAT – Air fryer: 350º Fahrenheit for 3 to 5 minutes, until hot all the way through. Skillet: covered, over medium-low heat, with a tablespoon or two of broth, about 5 minutes. Microwave: 30-second bursts until warm, about 90 seconds total. The air fryer brings the crust back, and the microwave works in a pinch.

MAKE AHEAD – Mix the seasoning up to a month ahead and keep it in a jar. You can also season the chops the night before, cover, and refrigerate. Pat them dry again before they go in the basket.

THERMOMETER – An instant-read thermometer is the whole trick. Pull each chop when the thickest part reads 145º Fahrenheit, the number the National Pork Board recommends. Chops of different weights finish at different times, so start checking at 11 minutes.

SINGLE LAYER – Give the chops a little space so hot air reaches every side. A 6-quart basket holds four 1-inch chops. In a smaller basket, cook two at a time and keep the first batch warm under foil.

REST – Five minutes under a loose foil tent lets the juices settle back into the meat. Slice right away and those juices end up on the cutting board instead.

Expert Tip – Thick chops keep cooking after they leave the basket. They climb a few degrees during the rest, so 145º Fahrenheit at the pull is the sweet spot. There is no reason to push them past it.

Heavier chops need the longer end of that range. Pull each one as it hits temperature and give the rest another minute or two.

Prep the chops

  • Preheat the air fryer to 400º Fahrenheit for 5 minutes.
  • Pat the pork chops completely dry on both sides with paper towels.
  • Stir together the salt, pepper, garlic powder, smoked paprika, and onion powder in a small bowl.
  • Rub both sides of each chop with olive oil. Sprinkle the seasoning over both sides and press it gently into the meat.

Air fry

  • Arrange the chops in a single layer with a little space between them. Work in batches if needed.
