What is another variation I could make?

This skillet meal would also be great with zucchini or squash.  You could add it in with the spinach or in place of the spinach. You would need to adjust your cooking time as squash takes longer to cook up than spinach does. Add the diced squash or zucchini to the skillet when you add the chicken sausage to give it enough time to soften.

  • Cook pasta according to package directions.
  • Sauté the avocado oil, diced shallot, salt, and pepper over medium-low heat in a large skillet. Stir often so the shallots do not burn. Stir in garlic.
  • Add the chicken sausage, stirring occasionally.
  • Once the chicken sausage has browned on all sides, add the cooked pasta to the skillet, give it a good toss to coat it in the oil, and reheat it.
  • Turn the stove off and add the baby spinach to the skillet, giving the dish one final toss to coat. The heat from the food and skillet will be enough heat to soften/cook the spinach.
