- SEASON & SEAR - Coat chicken with cajun seasoning sear over medium-high heat in butter and oil. Remove chicken and set aside.
- SAUTÉ & BOIL - Cook onions and garlic, add tomatoes and broth, and bring to a boil. Reduce heat, add pasta, and simmer until tender.
- COMBINE - Add chicken back. Melt in cream cheese. Optional: Season to taste with salt and black pepper. Top with green onions.

Cajun Chicken Pasta
Ingredients
- 1-½ tablespoons cajun seasoning
- 1 tablespoon olive oil
- 1 tablespoon butter unsalted
- 1 pound chicken breasts cubed
- 1 small yellow onion diced
- 2 cloves garlic minced
- ½ pound penne pasta uncooked
- 1 can (15-ounce) fire roasted tomatoes undrained
- 2 cups chicken broth
- 2 ounces cream cheese softened, cut into cubes
- 3 stalks green onions sliced
Instructions
- Season the cubed chicken with the cajun seasoning.
- Add butter and olive oil to a large skillet, heat to hot, then add the seasoned chicken and sear on all sides. Remove the chicken and set aside.
- Add the onion and sauté until soft, then add the garlic for 1-2 more minutes.
- Add tomatoes and chicken broth and stir to combine. Bring to a boil, add penne pasta. Cover and turn down the heat to simmer for 10 minutes. Stir occasionally.
- 3 minutes before the end of cooking, add back the chicken pieces, then continue to cook, covered.
- Add the cream cheese and stir until the cheese has melted.
- Remove from the heat. If desired season with salt and pepper. Sprinkle with chopped green onions.
