Ingredient Notes

POTATOES – This recipe calls for petite potatoes that get smashed flat before baking. Red Bliss or baby Yukon Golds also work great as stand-ins for their size and creamy texture.
BUTTER – Provides the flavor base for the herb parmesan coating.
CANOLA OIL – Canola oil is used to help get that irresistible crispy exterior on the potatoes as they bake. You can also use other neutral oils like vegetable, grapeseed, or avocado oil if you prefer.
GARLIC POWDER – This adds the garlic flavor in a subtle way. As a powder, it combines into the herbed butter paste to help the potatoes stick better. If you like you can also add a bit of onion powder.
PARSLEY – For this recipe, we use dried parsley to add an herb flavor to the potatoes. If using fresh parsley, follow a 3:1 ratio, using 1 tablespoon dried for every 3 tablespoon fresh parsley.
SALT & PEPPER – These basic seasonings add a savory touch, with salt-enhancing flavors and pepper balancing the potatoes’ natural sweetness.

REHEAT – To reheat leftovers, preheat oven to 375°F. Spread potatoes out on a baking sheet and bake for 10-15 minutes, until heated through and the crust becomes crispy again.
Recipe Success Tips
USE A RIMMED BAKING SHEET – This will prevent any melted butter or cheese from dripping off the pan and making a mess in your oven.
DON’T OVERCROWD – Leave 1-1.5 inches between each smashed potato so they can get crispy all over without steaming. Use two pans if needed or work in batches.
GRATE FRESH CHEESE – Pre-grated parmesan has anti-caking agents that can make the cheese less likely to get crispy. Freshly grate a wedge for best results.
LET REST – A few minutes of resting allows the insides to set up while keeping that crispy crust intact.
Commonly Asked Questions
Can I use larger Yukon potatoes that are cut into smaller pieces?
This recipe was developed and tested using petite-sized potatoes. When potatoes are cut into larger pieces, they will cook softer and may be difficult to smash after mixing with the parmesan butter.
How do I make the potatoes extra crispy?
Place them in a single layer on the baking sheet, with enough space between each smashed potato for even cooking.
