Ingredients for Crock-Pot Chicken and Stuffing Casserole on marble countertop.

CHICKEN – Boneless, skinless chicken breasts provide lean protein and a mild flavor that pairs perfectly with the creamy sauce and savory stuffing. You can use chicken tenders or boneless, skinless chicken thighs if that’s what you prefer. Be sure to adjust the cooking time accordingly.

SOUR CREAM – Sour cream adds richness and tanginess to the soup mixture, creating a creamy texture and adding depth of flavor. Greek yogurt can be used as a healthier alternative.

CREAM OF CHICKEN SOUP – Cream of chicken soup serves as the base for the sauce, providing creaminess and flavor. It adds a comforting element to this easy crockpot chicken. You can use cream of mushroom soup or cream of celery soup for a slightly different flavor profile.

DRY STUFFING MIX – Dry Stove Top stuffing mix not only adds texture but also infuses the dish with savory herb flavors. It absorbs the moisture from the sauce and chicken, creating a delicious stuffing layer. You can make your own stuffing mixture using breadcrumbs, herbs, and seasoning.

CHICKEN STOCK – Chicken stock enhances the flavor of this dish, adding depth and richness to the sauce. It also helps prevent the chicken from drying out during the cooking process. You can also use chicken broth. If you do, I recommend choosing a low-sodium broth.

BUTTER – Butter adds richness and flavor to the dish, especially when melted over the stuffing mix. I prefer to use unsalted butter. You can use margarine or olive oil as alternatives to butter.

SEASONING – We use a combination of onion powder, garlic powder and Italian seasoning. You can use fresh minced garlic and onions instead of the powdered versions for a deeper flavor.

Recipe Success Tips

MONITOR COOKING TIME – Keep an eye on the cooking time, as overcooking can result in dry chicken. Use a meat thermometer to check the internal temperature of the chicken for doneness.

ADD VEGETABLES – Enhance the nutritional value of this one-pot meal by adding chopped vegetables such as carrots, celery, or peas to the crockpot along with the other ingredients.

SERVE WITH FRESH HERBS – Garnish the finished casserole with fresh parsley or thyme to add a pop of color and freshness to the dish.

    1. A small 3 to 4 quart Crockpot should work just fine for this recipe, especially if you’re not doubling it. Just make sure everything fits snugly with the lid able to close fully. If it’s packed to the top, extend the cook time slightly and check that the chicken is fully cooked before serving.

    1. Ok, im making this tonight but using turkey breast tenders, and forgot cream chicken soup, so think I’ll just make normal pan gravy and pour over it..

      1. Hi Margaret. I didn’t test it that way but your idea sounds good. And I think the way you’re planning to alter the recipe might actually might turn out very nice. I’d love to know how it worked out for you. Thank you for sharing.

I like easy delicious recipes. I tried this and it was a big hit with my family. I did salt and pepper the chicken breasts before putting in the crockpot. Added a little more chicken broth, and a chicken bouillon. It added great depth in flavor. I sent this to my daughter to make for her family, my grandsons would love this. Thank you

  3. Hello…. I will be trying this recipe this week and want to add fresh carrots, at what point should I add the carrots…
    Thank you

    1. If you’re adding fresh carrots, put them in at the beginning with the chicken and stuffing mix. They’ll soften up nicely as everything cooks. Just cut them into small chunks or thin slices so they’re tender by the time it’s done. That’s all you need to do.
