ZUCCHINI – I use one medium zucchini sliced into ⅛-inch-thick slices. Zucchini is low in calories and provides a great base for our chips. Its mild flavor makes it perfect for soaking up the seasonings. Use a knife or my favorite mandoline.
OLIVE OIL – I chose olive oil because it helps the seasonings stick to the zucchini and adds a rich flavor. Olive oil is one of the items I splurge on, and I will mostly go with extra virgin olive oil. Costco has a very good one that you can easily decanter into a spray bottle. You can also use avocado oil or any other cooking oil you prefer.
CHEESE – Parmesan cheese is my choice for this recipe because it provides a savory, cheesy touch and helps create a crispy texture. If you prefer, you can substitute with Romano or Pecorino cheese.
SEASONINGS – The mix of Italian seasoning, red pepper flakes, kosher salt, black pepper, onion powder, garlic powder, and paprika adds a burst of flavor to the zucchini chips. You can adjust the seasonings to suit your taste or add other spices like cumin or chili powder for a different twist.
PARSLEY – Fresh, chopped parsley is optional, but it adds a fresh touch and a pop of color to the finished chips. You can also use other fresh herbs like basil or cilantro if you prefer.
How To Make Air Fryer Zucchini Chips

- Mix olive oil, Parmesan cheese, and seasonings in a large mixing bowl. Remove any excess moisture from the zucchini, add the slices to the bowl and toss until coated.
- Place the slices in the air fryer in a single layer without overlapping. Cook at 400° Fahrenheit for 4 minutes.
- Flip the slices and cook for an additional 4-8 minutes, checking every 2 minutes until golden brown and crispy.
- Remove fully cooked slices, continue cooking the rest, sprinkle with parsley, and serve.

STORE – Keep any leftover zucchini chips in an airtight container in the refrigerator for up to 2 days.
FREEZE – Freezing is not recommended as it may affect the texture of the chips.
REHEAT – Reheat in the air fryer at 350° Fahrenheit for 2-3 minutes.

Instructions
