This is such a flavorful and easy-to-make fall soup. Sometimes the secret of a great recipe is that they are easy to make and includes only a handful of ingredients.

This recipe has just 5 main ingredients: bacon, butter, broth, onions, and sweet potatoes. Combining bacon drippings and butter to sauté the onions adds flavor and deliciousness.

I like adding a dollop of sour cream to this top, along with the chopped bacon bits. But you can also add some shredded Cheddar cheese and chopped scallions.

Adding a handful of croutons can provide some additional crunch. However, I prefer a good slice of fresh bread with fall soups.

How To Make This Sweet Potato Soup Recipe

Process Step: Puree soup until smooth.
  1. COOK BACON: Fry bacon, remove, and chop.
  2. SAUTÉ ONIONS: In bacon drippings and butter, sauté onions.
  3. BOIL POTATOES: Add cubed sweet potatoes and broth to the pot. Boil, then simmer.
  4. BLEND: Add most of the bacon back, blend, and season.

Recipe Success Tips

  • If you don’t have an immersion blender, transfer the soup into a countertop blender and purée until the desired thickness.
  • Use unsalted butter. Always! Why?
    Because unsalted butter gives you control to know and determine exactly how much (or how little) salt you add. The salt content of salted butter varies from brand to brand.
  • Look for good quality bacon. Bacon adds so much to both flavor and texture in this recipe. I used this thick-cut bacon. You can also use pancetta instead of bacon.
  • Using a large pot to cook bacon might feel a bit odd. But it saves on dishes! If that’s not to your liking, you can cook the bacon in a frying pan. Just make sure to keep some of those droppings for the soup.
  • I like to cut my bacon strips in half to maximize the space. Be sure to layer the bacon in a single layer. Do batches if necessary.
  • Broth. I use beef broth because it works well with the bacon flavor, but you can also use vegetable broth.

Leftovers

STORE – Keep in an airtight container in the refrigerator for up to 3 days.

FREEZE – You can freeze the soup for up to 2 months; remember to leave out any dairy toppings before you do.

REHEAT – Warm it up on the stove over low heat, stirring frequently to keep the texture smooth.

  • COOK BACON: In a large pot, cook bacon until it's crispy, around 8 minutes. Move the bacon to a plate, let it cool, then chop it into small pieces.
  • PREPARE ONION BASE: Remove all but 2 tablespoons of bacon drippings from the pot. Add butter and sauté the diced onions over medium heat until they're soft, about 7 minutes.
  • ADD BROTH AND SWEET POTAOTES: Chop the sweet potatoes into 1-inch cubes. Add the dried rosemary and diced sweet potatoes to the pot. Pour in the beef broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes or until the sweet potatoes are tender.
  • BLEND AND SEASON: Once the sweet potatoes are tender, add all but 2 tablespoons of the chopped bacon. Use an immersion blender to purée the ingredients. Season to taste with salt and pepper.
  • SERVE: Pour the soup into bowls and top with sour cream and the remaining bacon bits.

Notes

I used roughly 1/2 teaspoon of salt 1/4 teaspoon of pepper to season the soup. The amounts of salt and pepper you’ll need depends on the type of broth and bacon you use as well as your own preference.
