STEP 1 

Boil the unpeeled potatoes in water until they are tender, about 20-25 minutes. Peel, dice, and keep warm. 

STEP 2 

Heat olive oil over medium heat and fry bacon. Add add diced onion and sauté until transluscent and tender.

STEP 3

Once the bacon is crispy and the onions tender, mix in mustard and sugar and stir until well combined. 

STEP 4

Deglaze the mixture with white wine vinegar and beef broth. Bring to a simmer, garnish with fresh herbs. 

STEP 5

Allow the vinaigrette to simmer for a few minutes, then pour the warm bacon vinaigrette over the potatoes.

STEP 6

Toss the warm potatoes in the warm bacon vinaigrette. If desired, sprinkle with more fresh herbs and serve.
