POTATO SOUP

Old Fashioned

bacon

butter

sugar

nutmeg

russet potates

garlic

milk

broth

vegetable

onion

fry sliced bacon until crispy, remove bacon

melt butter  in bacon drippings

add sugar, nutmeg, potatoes, garlic,  onions and  sauté for 5 minutes

Step 3

stir in 2/3 of the shredded soup

Step 4

use an immersion hand mixer and purée until smooth

Step 5

serve immediately, sprinkle with remaining cheddar cheese, crispy bacon (and scallions)
