Shrimp Carbonara

This super simple shrimp carbonara recipe is going to become your new go-to pasta recipe for busy nights!

  • PASTA - Cook pasta according to the package instructions — reserve 1 cup of pasta water.
  • EGG MIXTURE - Combine 2 eggs plus one egg yolk in a mixing bowl. Whisk until well combined. Add parmesan cheese and parsley. Set aside.
  • BACON - Heat olive oil in a large skillet. Cook bacon on medium-high heat until crispy. Remove the bacon with a slotted spoon and transfer it onto a plate. Pat dry and set aside.
  • GARLIC - Add minced garlic to the skillet and cook in the bacon fat for 1-2 minutes. Use a slotted spoon to remove garlic and set aside.
  • SHRIMP - Sauté shrimp in the same skillet and cook for 2-3 minutes on each side. Remove shrimp and set aside.
  • PASTA - Reduce the heat to low. Add cooked pasta and toss in the bacon fat/olive oil mixture. Turn off the heat.
  • ADD EGG MIXTURE - Pour in egg-cheese mixture and one cup of hot pasta water. Toss the pasta for about 2-3 minutes.
  • ADD BACON & GARLIC - Add garlic and bacon to the pasta and combine well. Season with salt and pepper. Top the pasta with the sauteéd shrimp. Serve immediately.

TIP: Flip the shrimp only once. You don't want to overcook the shrimp.
