Prep

  • Brown the ground beef over medium heat in a large skillet. About 8 minutes. Remove any excess fat.
  • Transfer canned diced tomatoes into a food process, purée until smooth.

Making The Casserole

  • Transfer the cooked beef mixture, red kidney beans, tomatoes, and chunky salsa, and chili powder into an ungreased 8x11 casserole baking dish. Season with salt.
  • Cover with foil and bake for 35 minutes at 400 Fahrenheit.
  • Remove from the oven and sprinkle with shredded sharp Cheddar.
  • Continue to bake uncovered for an additional 10 minutes or until the cheese is melted.
