Preheat your oven to 400° Fahrenheit. Lightly grease a 9x13 casserole with cooking spray.
Whisk the mayonnaise, softened butter and garlic in a small bowl and set aside.
Stir the Panko breadcrumbs, Parmesan cheese, and Italian seasoning in a separate shallow bowl and set aside.
Use a spoon or pastry brush to coat each chicken breast with the mayonnaise-butter mixture. Dip both sides of the chicken in the breadcrumb mixture and place in the casserole dish.
Bake for 12-15 minutes.
