Turkey Tacos

Turkey Tacos transform leftover holiday turkey into a completely different meal that your family will actually request. The combination of taco seasoning and chicken broth makes the turkey taste fresh and flavorful again.

  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onions and peppers and cook for 5 minutes until softened and fragrant.
  • Stir in the shredded turkey and taco seasoning. Pour in the chicken broth and stir well. Bring the mixture to a bubble, then reduce the heat to medium-low and cook for 5 minutes until the liquid has mostly absorbed and the turkey is well coated.
  • While the turkey simmers, place the taco shells on a baking sheet and warm them in a 350° Fahrenheit oven for 3 to 4 minutes until crisp.
  • Fill the warmed taco shells with the turkey mixture and finish with toppings such as shredded lettuce, grated cheese, diced tomatoes, avocado, salsa, sour cream, and a squeeze of fresh lime juice.
