This Sweet Potato Cornbread is soft, golden, and lightly sweet, made with mashed sweet potato, yellow cornmeal, and evaporated milk. It mixes up in two bowls and bakes in one 8x8 pan in about 35 minutes. Serve it warm with butter and honey or next to a bowl of chili.
Preheat the oven to 375º Fahrenheit. Grease an 8x8-inch baking pan.
Whisk the cornmeal, flour, brown sugar, baking powder, baking soda, and salt in a large bowl.
Mix the batter
Whisk the mashed sweet potato in a second bowl until smooth. Add the eggs, evaporated milk, and melted butter and whisk until combined.
Pour the wet ingredients into the dry ingredients. Fold with a spatula just until no dry pockets remain. The batter will be thick.
Bake
Spread the batter in the pan and smooth the top.
Bake for 30 to 35 minutes, until golden and a toothpick in the center comes out clean or with a few moist crumbs.
Cool in the pan for 10 to 15 minutes. Cut into 9 squares.
Notes
SWEET POTATO
Prep time does not include cooking and mashing the sweet potato. Bake them as in Mashed Sweet Potatoes, or microwave one large sweet potato for 6 to 8 minutes. A 15-ounce can of sweet potato puree works; measure out 1 cup.
REST TIME
10 to 15 minutes in the pan, not included in Total Time.
SWAP - No evaporated milk? Whole milk or half-and-half, same amount, works.
