  • Cook pasta according to package instructions, drain, and set aside.
  • Add 1 cup of Half & Half and the salt to a large saucepan over medium heat and simmer until it just starts bubbling. Do not let it boil.
  • Whisk the remaining Half & Half and the cornstarch in a small bowl until no lumps remain.
  • Slowly pour the slurry into the saucepan. Whisk the mixture over medium heat until the sauce thickens enough to coat a spoon.
  • Turn the heat down to low. Add the freshly shredded cheese. Stir for 3-4 minutes, until the cheese is fully melted and the sauce is smooth.
  • Add the cooked macaroni to the cheese sauce and stir well to combine.
