Melt 1 ½ cup of chocolate chips in the microwave. Use 30 seconds intervals. Remove after each interval and mix the chocolate. Once the chocolate has almost completely melted remove and set aside. Allow to cool while preparing the batter.
Oven Prep
Preheat 350º Fahrenheit. Line two baking sheets with parchment paper.
Making The Batter
In a large bowl, beat honey. brown sugar, and eggs with an electric mixer until creamy.
Pour the melted chocolate into the batter and beat until creamy.
Add flour, baking powder, and salt and continue to mix until well combined. Fold in the remaining chocolate chips.
Rest
Cover bowl with plastic wrap and freeze for 5 minutes. Use a 1-inch cookie scoop and drop the batter on the baking sheet. *Optional: Decorate with one chocolate morsel on top.
Bake
Bake for 12-15 minutes. Remove from the oven and transfer onto a wire rack. ENJOY!

Tips for Melting ChocolateMelting chocolate in the microwave is easy. Place the chocolate chips in a microwave-safe container and heat them on high for 30 seconds. Remove the bowl from the microwave and briefly stir the chocolate. Return to the microwave and heat for another 30 seconds, stir and add another 30 seconds. Each microwave is a bit different, but for reference, it takes 1:30 minutes in my microwave to melt 1 ½ cups of chocolate chips. The chocolate doesn’t have to be completely melted. A few semi-melted pieces are perfect and will add texture to the dough. Melt the chocolate first. This way the chocolate can cool down a bit while you are preparing the batter. If you don’t want to use a microwave, place a heat-proof bowl on top of a slightly smaller pot filled with simmering water. Stir constantly until the chocolate is melted.
