Tomato Soup

Ingredients

  • ¼ cup olive oil extra virgin
  • 3 cloves garlic minced
  • 4 pounds tomatoes 7-8 large tomatoes, ripe, chopped
  • ½ cup basil thinly sliced
  • salt and pepper to taste
  • 1 tablespoon sugar optional

Instructions

  • Use a large pot or Dutch oven and heat olive oil over medium heat.
  • Add minced garlic and sauté until lightly brown and fragrant. About 1-2 minutes.
  • Add tomatoes and basil. Bring to a boil. Reduce heat to medium-low and simmer for 20 minutes.
  • Use a hand blender (or transfer into a food processor) and puréee until smooth. Season to taste with salt and pepper.
    OPTIONAL: Add a tablespoon of sugar.

Notes

Adding a tablespoon of sugar can enhance the tomato's natural sweetness, but it is not necessary and not included in the calorie count.
