This No Bake Pumpkin Cheesecake is a creamy make-ahead fall dessert with real pumpkin, warm spices, and a crunchy pecan graham cracker crust. The refrigerator does all the work, so it is just right for Thanksgiving when the oven is full.

Stir the graham cracker crumbs, pecans, granulated sugar, and melted butter until evenly moistened.
Press the mixture firmly into the bottom of an 8-inch springform pan. Freeze for 15 minutes.
Make the Filling
Beat the cream cheese until completely smooth, about 2 minutes. Add the pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, vanilla, and salt. Beat until smooth.
In a separate bowl, whip the heavy cream and powdered sugar to stiff peaks.
Fold the whipped cream into the pumpkin mixture in two additions until no white streaks remain.
Chill and Serve
Spread the filling over the chilled crust and smooth the top. Cover and refrigerate at least 4 hours, best overnight.
Run a thin knife around the edge, release the springform, and slice.
Top with whipped cream and a dusting of pumpkin pie spice just before serving.

CHILL TIME
Refrigerate at least 4 hours before slicing. Overnight gives the firmest set and the cleanest slices. Chill time can vary and is not included in the total time above.
