Hawaiian Chicken

This Easy Hawaiian Chicken Dinner combines succulent chicken, a medley of colorful bell peppers, and sweet pineapple chunks, all brought together in a sweet and savory sauce that's got just a tiny bit of a kick to it.

  • Heat the canola oil in a large pan over medium-high heat. Add the cubed chicken and cook until it's browned and cooked through, about 7-10 minutes. Then, set it aside.
  • Sauté the chunks of bell peppers in the same pan until they begin to soften.
  • While the peppers are cooking, whisk together the soy sauce, brown sugar, ketchup, red pepper flakes, minced ginger, and minced garlic in a separate bowl. Pour this mixture into the pan with the bell peppers.
  • Add the drained pineapple chunks to the pan.
  • In a separate bowl, mix the cornstarch with the reserved pineapple juice until smooth. Add this mixture to the pan.
  • Return the cooked chicken to the pan and stir to combine all the ingredients.
  • Bring the mixture to a simmer, and cook until the sauce thickens, about 3-5 minutes.
  • Serve the Hawaiian chicken over cooked rice.
