This Ground Beef and Potatoes skillet is an easy one-pan dinner. Seasoned beef and tender Yukon Gold potatoes simmer in a savory gravy, then get topped with melted cheddar cheese. It is ready in under an hour and the whole family will ask for seconds.

Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles.
Add the onion and bell pepper. Cook 4 to 5 minutes until softened. Stir in the garlic and cook 30 seconds.
Season and Simmer
Stir in the tomato paste, smoked paprika, Italian seasoning, salt, pepper, onion powder, and garlic powder. Cook 1 minute until the paste darkens slightly.
Add the potatoes, beef broth, and Worcestershire sauce. Stir well.
Cover, reduce the heat to medium-low, and cook 20 to 25 minutes, stirring occasionally, until the potatoes are fork tender.
Thicken and Finish
Whisk the cornstarch and cold water in a small bowl until smooth.
Stir the slurry into the skillet. Simmer 1 to 2 minutes until the sauce thickens.
Sprinkle the cheddar over the top. Cover 2 minutes until melted. Top with parsley and serve warm.
