Season the chicken breasts with Italian seasoning, salt, and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden brown.
Top each chicken breast with mozzarella slices.
Transfer skillet to oven and bake for 12-15 minutes until chicken is cooked through and cheese is melted. Remove from the oven and let rest for 5 minutes.
