Chicken and Gnocchi Soup

Instructions

  • Add onion, carrots, celery, garlic, salt, pepper, celery seed, dried basil, and thyme to a large slow cooker and toss to combine.
  • Add chicken thighs and chicken broth, then stir well. Cover and cook on low for 6 to 7 hours, until the chicken is fully cooked and vegetables are tender.
  • Remove the chicken from the slow cooker and shred or chop on a cutting board. Set aside.
  • Stir heavy cream into the soup. In a small bowl, whisk cornstarch into ¼ cup of hot broth until smooth, then stir the slurry into the soup to thicken.
  • Add the spinach, shredded chicken, and gnocchi. Stir gently to combine and cook for 15 to 20 minutes, until the gnocchi is tender and floating.
  • Season to taste with additional salt and pepper if needed. Serve hot with freshly grated parmesan and fresh thyme.
