All-American Meatloaf

  • Preheat the oven to 375° Fahrenheit and line an 8x4-inch bread loaf pan with parchment paper or grease it lightly.
  • Combine the ground beef, ground pork, crushed Ritz crackers, chopped onion, minced garlic, eggs, milk, ketchup, Worcestershire sauce, salt, black pepper, Italian seasoning, and paprika in a large mixing bowl. Mix gently with your hands until just combined.
  • Transfer the mixture to the prepared loaf pan, pressing it evenly into shape.
  • Bake uncovered at 375° Fahrenheit for 40 minutes.
  • While the meatloaf bakes, whisk the ketchup, brown sugar, apple cider vinegar, Dijon mustard, and smoked paprika in a small bowl to make the sauce.
  • After 40 minutes, remove the meatloaf from the oven and spread the sauce evenly across the top. Cover the pan loosely with aluminum foil and return to the oven for an additional 20 minutes.
  • Remove the meatloaf from the oven and let it rest in the pan for 10 minutes.
  • Transfer the meatloaf to a serving plate, slice, and garnish with fresh parsley before serving.
