  • In a large bowl, whisk together the olive oil, lemon juice, garlic, and spices until fully combined. Add the chicken thighs and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
  • Preheat the air fryer to 380° Fahrenheit for 3 to 5 minutes.
  • Arrange the chicken thighs in a single layer in the air fryer basket. If necessary, cook in batches to avoid overcrowding.
  • Air fry for 12 to 15 minutes, flipping halfway through, until the chicken is golden brown and the internal temperature reaches 165° Fahrenheit. Transfer the chicken to a plate and let it rest for a few minutes.
  • Serve with lemon wedges and a sprinkle of chopped parsley, alongside your favorite Mediterranean sides.
