If required slice chicken cutlets in half. Pat dry and season with salt and pepper.
In a shallow bowl, beat the eggs. Dip each chicken cutlet into the egg mixture.
Spread panko bread crumbs in a separate dish and coat each chicken cutlet on both sides.
Lightly grease the air fryer basket with olive oil, place the breaded cutlets in a single layer. Spray the coated chicken cutlets lightly with olive oil.
Air fry for 12-15 minutes at 375º Fahrenheit, flipping halfway. Once cooked, let the cutlets rest for 2-3 minutes before serving.

FOOD SAFETY - The internal temperature of the chicken should be 165° Fahrenheit, and it should have a golden brown, crispy exterior. I usually use an instant-read thermometer to check for doneness.OIL - You can use a bottle of olive oil spray or buy a refillable spray bottle and use your favorite olive oil.
