Combine the all-purpose flour, salt, baking powder, and sugar in a large mixing bowl. Grate the cold butter directly into the flour mixture using a box grater, and then gently mix them until the butter is well distributed.
Pour in the buttermilk gradually, stirring the mixture as you go. Mix the dough just until it comes together; avoid overmixing to keep your biscuits tender.
Place the dough out onto a lightly floured surface. Gently knead it to form a cohesive ball. Pat or roll the dough to a thickness of about 1 inch, then fold it over onto itself. Repeat this process 2-3 times to create layers.
Using a biscuit cutter, pastry cutter, or a round glass, cut biscuits from the 1-inch laminated dough and place them on a parchment paper-lined baking tray.
Spray your air fryer basket with cooking spray, then place the biscuits inside in a single layer, ensuring they are not too close to each other. Depending on the size of your air fryer, you might need to cook them in batches.
Air fry the cut biscuits at 350° Fahrenheit for 10-12 minutes of cook time or until they are golden brown on top. Cooking times might vary, so watch them towards the end.
