  • Preheat oven to 350º Fahrenheit. Line a standard 9x5 loaf pan with parchment paper and spray with non-stick cooking spray. Set aside.
  • Combine flour, baking soda, salt, and sugar and stir until well combined.
  • Mash banana slices in a separate large mixing bowl. Mix in the mayonnaise, egg, and vanilla with the mashed bananas.
  • Add the dry ingredients and mix until smooth. There may still be a few lumps from the bananas - this is fine.
  • Fold in the mini chocolate chips and stir until all the chocolate chips are well incorporated.
  • Pour the batter into the loaf pan. Bake for 65 minutes, or until a toothpick inserted in the center comes out with no batter.
