  • Heat 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add diced sweet potatoes, cover, and cook for 5 minutes.
  • Mix in diced ham, diced ham, onion, and mustard. Cover and cook for an additional 10 minutes.
  • Flip everything upside down and remove the lid. Season with black pepper and reduce heat to medium. Cook uncovered for an additional 5-10 minutes.
  • Add watercress and stir until wilted for about 1 minute.
  • Use remaining olive oil and cook eggs to your liking in a separate pan. Plate sweet potato hash and top with fried egg, garnish with sprigs of watercress.
