Heat a large skillet on medium-high and add some olive oil. Add the diced sweet potatoes, cover the skillet, and cook for 5 minutes.
Mix in the diced ham, onion, and mustard. Cover the skillet again and cook for another 10 minutes.
Remove the skillet lid and flip the ingredients. Reduce the heat to medium and cook for another 5 to 10 minutes, uncovered.
Stir in the watercress and cook until wilted, about 1 minute. Season to taste with salt and pepper.
In a separate pan, cook the eggs sunny-side up. Place the eggs into the skillet with the hash and serve family style.
