Sweet Potato Hash

  • Heat a large skillet on medium-high and add some olive oil. Add the diced sweet potatoes, cover the skillet, and cook for 5 minutes.
  • Mix in the diced ham, onion, and mustard. Cover the skillet again and cook for another 10 minutes.
  • Remove the skillet lid and flip the ingredients. Reduce the heat to medium and cook for another 5 to 10 minutes, uncovered.
  • Stir in the watercress and cook until wilted, about 1 minute. Season to taste with salt and pepper.
  • In a separate pan, cook the eggs sunny-side up. Place the eggs into the skillet with the hash and serve family style.
