Sauté the avocado oil, diced shallot, salt, and pepper over medium-low heat in a large skillet. Stir often so the shallots do not burn. Stir in garlic.
Add the chicken sausage, stirring occasionally.
Once the chicken sausage has browned on all sides, add the cooked pasta to the skillet, give it a good toss to coat it in the oil, and reheat it.
Turn the stove off and add the baby spinach to the skillet, giving the dish one final toss to coat. The heat from the food and skillet will be enough heat to soften/cook the spinach.
