Strawberry Cheesecake Bars

Ingredients

CRUST & CRUMB TOPPING

CREAM CHEESE FILLING

Instructions

  • Preheat your oven to 350° Fahrenheit and grease a 9x13 baking dish.

Dough (Crust and Topping)

  • In a large bowl, combine the melted butter, sugar, egg, vanilla extract, baking powder, salt, and flour. Use an electric mixer and beat until the dough is crumbly.
  • Reserve ¼ of the dough, and press the remaining dough evenly into the baking dish.

Cheesecake Filling

  • In a separate mixing bowl, combine the Greek yogurt, instant pudding mix, sugar, egg, and lemon juice. Mix well.
  • Spread the cream cheese filling mixture on top of the dough evenly.
  • Cover the cream cheese filling with the sliced strawberries.

Crumb Topping

  • Take the reserved ¼ of the dough and crumble it on top of the strawberries.

Bake

  • Bake in the preheated oven for 30-35 minutes or until the crumb topping is golden brown and the cream cheese filling is set.
  • Remove from the oven and let cool to room temperature before slicing and serving. Enjoy!

Notes

GREEK YOGURT. I recommend using 0% Stonyfield Greek Yogurt. This particular brand works out best for cheesecake recipes made without cream cheese. Other brands work, too. I recommend this one because the cheesecakes made with this yogurt have the nicest texture.
