Notes
Stand Mixer or Hand MixerI used a stand mixer for this recipe. If you don't have one use a hand mixer. Powdered SugarI like to dust the top of the cookies. If you prefer you can also roll the cookies in powdered sugar. In this case, allow the cookies to cool for a couple of minutes until they are still warm but cool enough to touch.Sift the powdered sugar into a shallow bowl and roll the cookies until they are completely covered in powder sugar. Shake off the excess sugar. Move cookies onto a cooling rack to allow the powdered sugar to dry and stick to the cookie. Calorie CountI try to provide as accurate a calorie count as possible, but with a recipe like this one, it can't quite be done. I'll often just dust the top with powdered sugar to reduce the sweetness and thus the calorie count, but if you like a sweeter cookie, you'd roll the cookie in the powdered sugar. I've estimated the higher calorie count.
