Yes, you can absolutely use mini loaf pans instead of a 9×5. Keep the oven temperature the same, but start checking for doneness around 25 to 30 minutes. They’re ready when a toothpick comes out clean and the tops are lightly golden. Fill the pans about two-thirds full so they bake evenly.
